Pangoccioli
La ricetta dei Pangoccioli mi ripromettevo da un po’ di farla, in questo periodo, complice il momento di isolamento ho deciso finalmente di provarla.
So che ai ragazzi piacciono moltissimo e allora invece di comprarli confezionati perchè non provare a farli da se? Gocce di cioccolato avvolte nell’abbraccio di una morbidissima pasta brioche, preparati in casa con ingredienti genuini , semplicemente perfetti per una gustosa merenda.
Ingredienti per i Pangoccioli
560 gr di farina
100 gr di acqua a temperatura ambiente
160 gr di latte intero fresco a temperatura ambiente
15 gr di lievito di birra fresco
1 uovo
120 gr di zucchero
50 gr di burro morbido
7gr di sale
125 gr di gocce di cioccolato fondente(fredde di freezer)
1 cucchiaino di miele
I semi di una bacca di vaniglia
Come preparare i Pangoccioli
Prepararate un lievitino mescolando 50 ml di acqua e 50 ml di latte (dal peso totale) ,il ilevito e 100 gr di farina (presa dal totale).
Dopo circa 1h e 30′ quando il lievitino è gonfio seguite questo procedimento:
– aggiungete lo zucchero, la farina e la restante miscela di acqua e latte.
– Inserite miele e vaniglia e in fine l’uovo, che lascerete amalgamare completamente all’impasto.
– Inserite il burro morbido a pezzetti e poco alla volta, ribaltate ogni tanto l’impasto.
-Aggiungete infine il sale e le gocce fredde di freezer a impastare prima nella macchina poi a mano .
Arrotondare l’impasto e metterlo a lievitare 3/4 h coperto.
Trascorso questo tempo mettetel’impasto su una spianatoia e fate delle pieghe come in foto, coprite con un canovaccio e fare riposare 1h e poi date altre due pieghe a questo punto sarete pronti a formare i pangoccioli .
Dividere il panetto in tanti pezzi da 50 gr.
Disponete su una teglia foderata di carta da forno e lasciate lievitare per 2 h prima di infornare spennellate con una miscela di tuorlo d’uovo e latte.
Infornate e 180° per 16 minuti.
